Recommended by the Michelin Guide as one of their favorite vegetarian restaurants in the Hudson Valley. Fainting Cow offers a refined take on rustic American cuisine. Focusing on influences of nature, bringing small local farms and the unique aspects of selected proteins to classic American favorites. We aim to create simple, uncomplicated cuisine by showcasing fresh ingredients.

Chef Michelle Bouvant grew up on a rural farm in France. She learned her craft by helping her mother farm and prepare meals. She went on further to work in several fine-dining restaurants throughout Europe, South America, and has found her home in the Hudson Valley, New York.

Fainting Cow Vegetarian Restaurant & Bar emphasizes the benefits of plant-based foods while allowing small amounts of animal products.
It takes a primarily plant-focused approach to eating, but includes some meat and other animal products, like eggs and dairy, in moderation for our "flexitarian" customers.
Our assignment was to create a branding strategy that complimented their mission statement. We further completed marketing materials and the company website.

Yes...we use dairy products such as eggs, milk, cheeses and butter all locally sourced. We have an extensive cheese selection we pair with our select wines.
